Currently, the owner opens the business most mornings, while one of the staff members closes some evenings & the owner other evenings. The owner takes care of all financial aspects of the business including cash-up and ordering of stock. Ordering of stock is mostly done on a Monday/Tuesday for the week ahead. The owner is mostly not present during the weekday trade as he has a full-time job. Stocktake is performed every Monday by the two employees working that specific day. There is an established process of capturing invoices & loading stock onto the Businessâs point of sales inventory system.

The business is subject to seasonal trends. Peak sales are during the summer months & in the weeks preceding Christmas. The rest of the yearâs sales are relatively consistent at R120k-160k incl. VAT per month. During winter, sales are driven more by the retail component than the 'on premise' part of the business. Fatherâs Day is an important sales period for the business.
